First Look: Eire’s Blue Guide reveals two new members for 2021

A 19th century country house in Connemara and one of Dublin’s most iconic restaurants add to the Irish Blue Book for 2021.

A 13 bed country house from the 1830s, elphi Lodge is set on 1,000 acres in the pristine Delphi Valley in Co Galway.

The main house, communal dining, snooker room, and log fire reception rooms are known as the fishing base and traditional lodge, and are complemented by six old world self-catering cottages.

Although blocked below level 5, future prices are quoted from € 125 per person with a minimum stay of three nights for a maximum of 16 guests.

In Dublin, the Dax Restaurant offers a sophisticated take on modern Irish and French cuisine on Pembroke Street Upper. Chef Graham Neville focuses on the best local ingredients, and the wine list is popular with foodies in town.

During the lockdown, a “Dax at Home” collection service with weekend menus will be offered, including main courses such as roast halibut with Jerusalem artichoke and mussel sauce or a sirloin made from Mount Leinster beef, which is served alongside starters, dessert, homemade bread and petit fours for € 44 pp .

Laura Bowe, Chair of the Irish Blue Book, welcomed the newcomers.

“It has been a challenging year for our industry and I would like to thank our loyal customers for their continued support. I hope they enjoy the Dax Restaurant and Delphi Lodge in the years to come.”

While most of its properties are currently closed, Ireland’s Blue Book members have been open and “thankfully very busy” during their stay this summer, and vouchers have continued to sell well.

“From the news we see, it is clear that many people are saying thank you and giving gifts for missed birthdays and occasions,” CEO Michelle Maguire recently told the Irish Independent.

“They give you a little bit of hope and something to look forward to.”

No properties will leave the collection in the coming months, bringing the total number of properties to 57.

“The inspiration for Dax comes from owner Olivier Meisonnave’s love for his home in Aquitaine in south-west France with its ancient mix of Occitan, Angevin and Basque. The region has developed a flourishing repertoire of classic, rustic cuisine,” says Ireland’s Blue Book.

Chef Graham Neville has worked at TRU and Les Nomades in Chicago, Heston Blumenthal’s Fat Duck in Bray, Le Caprice in London and La Pyramide in Lyon, and worked with Kevin Thornton in his Dublin restaurant for seven years.

A favorite of couples and foodies, the restaurant is also known for its corporate entertainment and special occasion service. What You Need To Know: Delphi Lodge

Delphi Lodge was built as a hunting lodge and lodge by the Marquis of Sligo in the 1830s. He is said to have named it “Delphi” based on the alleged resemblance of the valley to the oracle’s homeland in Greece.

The cottages are 8 miles from Leenane, surrounded by some of the highest mountains in the west of Ireland and are also popular with hill walkers, artists and those looking for a quiet hideaway.

In addition to the famous salmon runs of the Atlantic fishery, wild animals include otters, badgers, pine marten and peregrine falcons.

The Killary Fjord is only two miles away and there are a number of sandy beaches, some of which are suitable for surfing, just a short drive from the property.
